The buds of the caper plant, preserved in brine. The smaller a caper, the more intense the flavours; Delmaine capers are surfines, the second smallest available. Perfect to add a salty, citrus flavour. Ideas: Heat olive oil, shallot and garlic cook on low heat, add lemon juice, zest and capers - stir in mint and parsley, a perfect herb caper sauce to spoon over cooked meats.
